my girlfriend does this and swears by it. she doesn't buy iced coffee in public anymore unless she knows it's been cold-brewed.
I don't drink coffee so I can't personally comment.

Although it's not the same thing, I cold-brew tea all the time.
When I brew certain black teas they get extremely bitter in hot water after just a few minutes, but I can cold-brew tea for hours without getting any bitterness at all.
I've never tried coffee in my life.

When I brew certain black teas they get extremely bitter in hot water after just a few minutes, but I can cold-brew tea for hours without getting any bitterness at all. I've never tried coffee in my life. this. cold brew tea is where it's at.

I have been a barista for 5+ years (I have an art school degree, so I was pretty much born to do this profession). I highly back cold brewing. I cannot back it hard enough. It's so easy to do to boot. Things you can do to make your iced coffee more awesome: Make coffee ice cubes. Dedicate an ice cube tray (or two depending on how much coffee you drink) to make coffee ice cubes. Just pour regular brewed coffee and let your freezer do the work. That way your iced coffee won't get watered down. Try to pick a roast that is lower in acidity. Otherwise it may still taste bitter as all get out. This is personal preference but I prefer medium and light roasts for cold brewed coffee (also lighter roasts have moar caffeine). But honestly it just depends on your palate and what you prefer. This is amazing:

This one coffee/ice cream place I go to, Karme Kreme does the ice coffee cubes... its the bee's knees.
